Chef Bae’s Relaxing Magnesium Jelly Popsicles

Ingredients:

For the Gummy Layer:

3 tbsp water

1 tsp gelatin

2 tbsp pitaya powder

2 scoops JSHealth Vitamins Pure Marine Collagen

For the Popsicle Base:

1 1/2 cups unsweetened coconut yogurt, unsweetened

1/2 cup pineapple juice

4 scoops JSHealth Vitamins Advanced Magnesium+ Powder

1 tbsp maple syrup, optional

Method:

In a small saucepan, whisk water and gelatin. Let bloom for 5 minutes. 

Gently heat until dissolved, then remove from heat. Whisk in pitaya powder and collagen powder until smooth.

Pour a thin layer of the gummy mixture into the bottom of each popsicle mould. Freeze for 20–30 minutes until set.

Meanwhile, in a blender, combine coconut yogurt, pineapple juice, magnesium powder, and maple syrup. Blend until smooth.

Once the gummy layer is set, pour the popsicle base mixture over it to fill moulds. Insert popsicle sticks.

Freeze for 4–6 hours or overnight until fully solid.

Run moulds under warm water to release. The gummy layer will be at the tip of the popsicle when served.
