Hassleback Potatoes

This is your sign to get a little fancy with your potatoes.

Hasselback potatoes not only look amazing, they taste incredible too! We've topped ours with fresh garlic and chives, but you can use your favorite herbs of choice. 

Slicing the potatoes takes a little bit of time but it is well worth it. This is a side dish perfect for the festive season or as a show-stopping side at any dinner party! 


Ingredients:
2kg (70.5oz) white washed potatoes
¼ cup extra virgin olive oil

To serve:
60g (2.1oz) butter, unsalted
2 garlic cloves, minced
1 bunch chives, finely sliced

Method:
1. Preheat the oven to 200°C or 390°F. Line a baking tray with baking paper.
2. Use a small knife to make slices in the potatoes, stopping 0.5cm away from the bottom of the potatoes. The slices should be .25-.5cm apart. Place the potatoes cut side up on the lined baking tray. Drizzle with extra virgin olive oil and season with sea salt and black pepper. Bake in the preheated oven for 70-80 minutes, or until the potatoes are cooked through and golden on top.
3. While the potatoes are cooking, melt the butter in a small saucepan. Add the minced garlic, season with sea salt and black pepper. Stir and set aside to let the flavors infuse.
4. Serve the potatoes on a platter and drizzle with the garlic butter. Garnish with chopped chives.
